The top of the list would be the mastodon and the giant elk. In North America the equines of the early Ice age were hunted into extinction.

It depends where in the world you mean. Pre-historic hunters in Europe, Africa, Asia, Australia and the Americas all hunted different sorts of animals.

Mostly they just went after common herd-animals -- deer, antelope, cattle or horses. The aboriginal Australians kangaroos since they had none of the above. Monkeys were also commonly hunted (even today) in parts of Africa, Asia and the Americas.

Some unusual tribes included the moa-hunters of New Zealand (a giant bird bigger than the ostrich) and the mammoth-hunters of the ancient Russian taiga (--frozen lands near the northern glaciers during the Ice Age).

If hunting food was scarce, some tribes would cannibalise their neighbours. The ancient Greeks, for example, knew of cannibal-tribes in both Europe and north Africa.

They also speak of desert tribes who lived exclusivelly on coastal fish and other sea-foods --- the so-called "ichthyophagi" or fish-eaters -- and even some Indian ocean tribes who lived entirely off giant-turtles!

Depends how far back you want to go. If you want about 35,000 with modern humans and Neandertals, you can see much of what they hunted on the walls of Lascaux Caves. Aside from mammoth and mastodons, there are horses, reindeer, red deer, pigs, antelopes, bison, aurochs, bear, fish, birds,and more. Human beings will eat just about anything but don't always commit things to artwork, so we'll skip grubs and larvae! Check out the link if you want a virtual tour of the caves.
