You've gotten some good answers so far.
Overall, I'd say that people in Seattle have a more "sophisticated" palate than in some other parts of the country.
Seafood is big here, as is coffee, and yes Teriyaki joints. There also seem to be many Thai restaurants, and Vietnamese "pho" is gaining in popularity. We seem to be short on classic NY Deli type places (many have tried, but few have succeeded).
As a city hemmed in by water on the east and west, land is expensive, and many lots are hilly. The weather is cloudy and damp (or wet) a good 9 months out of the year, so your building season is short, and you should plan on delays due to the wet. When designing a space, remember that outdoor eating space needs to be covered (and maybe even heated with outdoor space heaters), or you will be limited to a very short outdoor eating season.

the Salmon is terrific in Seattle. Lots of restaurants serve seafood. Do you want to compete and be fast-sea-food or be something different, so you will have less competition?
And it is the home of Starbuck's coffee and
"Seattle's best coffee."
Weather - it rains a lot in Seattle - a lot - more than in Florida.
the ocean and the bay keep the area warmer in winter than you would expect based on how far north it is. If you are BUILDING the restaurant, the building, there will absolutely be construction delays due to the rain. Most days, especially in winter, are overcast. It really depresses some people.
In addition, concrete will take longer to harden properly - since it "cures" by drying. that also extends the building time, but local builders should be able to estimate building time based on historical averages.
some parts of the city are on slopes, which would effect building design.
Due to the rain and coolness and humidity, some fast food restaurants or similar food places ( like an ice cream and frozen yogurt place) might not be as popular as it would be in other places.

in seattle, people really love the seafood, particularly salmon. there are some other restaurants there, like teriyaki, ethiopian cuisine, and of course the almighty fast food...but it's usually salmon that does the job.
as for building a fast food restaurant, you get rain pretty much all the time, especially in winter. there are some days where it's sunny. if you plan for a certain amount of time in a dry state, plan for about twice as long, or even longer.

People love Asian-American food here. There's a teriyaki, pho, or sushi joint in nearly every strip mall or main street.
