There is no doubt that "you are what you eat"
or don't eat . The one thing about the human body is when something is lacking in the diet, if you listen to your body, it tell you what it is.
Example:
When I was a child (4-6) I always ate the heads off match sticks. It drove everyone nuts trying to stop me and hide the match sticks.
Finally someone told the doctor (mom)
they checked me out and I needed potassium.
My body at that age told me and I was listening, but I didn't know why.
so when you see some eating 3 bunches of parsley a day or 3 heads of lettuce everyday don't laugh! It could wind up being you.
Parsley

Parsley is one of the world's seven most potent disease-fighting spices which also include Ginger, Oregano, Cinnamon, Turmeric, Sage, and Red chili peppers.

I find it amazing on a daily basis what your body tells you.
