Why is pepper hot and salt not?

Lemons contain citric acid; this is why they have a low pH and a sour taste. Oranges also have citric acid but not as much. Some can taste sour if over ripe or not ripe enough.
My niece eats lemon slices like sweets. It makes me cringe just watching her but she loves the taste of fresh lemons.

Thats a good question one of the best I think one of the replies is right though lemon have more acid in them which causes the acidic taste its just like asking why are some grapes green and some are red?

You do get Sweet Limes & i've often got an Organge that was more sour than sweet!
