Just looking for some opinions on why a girl would laugh at this point?

Nervous laughter would be my guess. Or maybe she was thinking, "Tee hee, I am married, now I can get fat!".

Pure happiness. I know if I were marrying Kenny Chesney, I wouldn't be able to stop smiling...lol. :-)

Maybe he looked so sweet and endearing saying "I do" that she didn't just smile -- she laughed, out of sheer joy and happiness.
Or maybe she was laughing out of relief -- i.e. she never thought this day would come, so hearing him say "I do" was both joyful and relieving at the same time.
I dunno. I haven't really analyzed this particular song, although I've heard it enough to be familiar with it. :)

Maybe she laughed b/c she knows he doesn't mean it, and they'll be divorced within 4 months. She just wants to help him spend his money :)
