I'd pick Lefty Grove. But an excellent and equally compelling case could be made for Walter Johnson.
The Ryan mystique is puzzling. I guess people are dazzled by some glitzy stats while blissfully ignorant of other facts which are inconvenient to their argument. There are at least 20 pitchers I'd choose above Ryan.

Major leagues:
Walter Johnson by far. He won 417 games on a losing Washington Senators team.
Had he played for a contender he would have won 600+ games easily and making this question that much easier to answer.

Christy Mathewson, the man was a complete beast. 373 wins, career ERA at 2.13. He was only in the league for 16 years and he has a World Series ring and five National League Pennants. His preformance in the 1905 World Series was amazing, he pitched three shutout games in a five game series. It is still one of the all time great postseason performances.
