Depending on how big they are, and what kind of materials they are made of:
French knitting spools:

If the spool is big enough you might be able to make a kind of knifty knitter out of it, just keep putting nails in:

If it is bigger still you might use in as braiding stool, like the ones they use in Kumihimo:

I have also seen spools and half spools seen used as (part of) a decorative candle holder.
A base to a side table.
And to store home made string and rope.
