The dispenser nozzle has a small tube inside it that "breathes" during fuel delivery. When the tip of the nozzle touches liquid fuel, and shuts off the air flow through the tube, it triggers a valve that shuts off the fuel flow, and prevents overfilling and a fuel spill.
