The way to tell which person is:
1st person or the self (I, me, we),
2nd person or the person spoken to (you),
3rd person or the person spoken about (he, she, him, her, they, them).
I agree - third person (everyone substitutes for they).

"Everyone" is an indefinite pronoun. The indefinite pronouns (everybody/anybody/somebody/all/each/every/some/none/one) do not substitute for specific nouns but function themselves as nouns. Check out http://grammar.ccc.commnet.edu/grammar/pronouns1.htm

"Everyone" is what we call an "indefinite pronoun." This means it doesn't refer to any particular person or group, but to all members. For example, when we say, "everyone" does it," we're being very indefinite about who(m) "everyone" may be.
