unplug the sensor on the bottom of the coolant tank. those things always stick on after the tank runs empty. After a day or so, try plugging it back in to see if it corrected itself.

The important dash gauge and lamp indications are for the coolant temperature. Always pull over and fix an overheated engine before it's damaged beyond repair. Your "coolant level low" or "add coolant" indicator probably needs replacing. The only sure way to check the coolant level is to remove both the radiator cap on top of the radiator and the coolant reservoir cap and top off the coolant. Then your safe even if the "coolant level low" light is on.

If you're talking about the "low coolant" light, you may have some air trapped under it. We used to have fun bleeding the air out after servicing cooling system.

The coolant temperature sensor is not working right. Not very expensive and it's a 5 minute fix.
