I have the Casino in the Sprite Tree unlocked, and all three dealers: Hops, Tep and Jum. But all three of them only offer 'The Matching Game' as a game option. I thought Jum was the Matching Game Dealer?? The site that I am looking at says that Hops should have a Poker game and Tep should have a Blackjack game. What's going on???

You must have the European edition. In the European edition of the game they disabled.
Here's what wikipedia says:
Most of these glitches were corrected in the European release of the game, although casino games were removed (leaving only "Memory"), bookcase functionality was removed and interaction with GBA Harvest Moon games was disabled.
Frankly, while your casino options are limited, considering the list of bugs you avioded, I think you are better off.
