Just brought a new 2007 Ninja 250, the engine oil level was fine when they delivered it. After riding it at low speed (15 mph, still learning) for about 20 mile, i noticed the engine oil is completed gone from the little glass window thing. So i brought some Castrol 10W-40 and added about 1.25 qt, the level was fine. Just rode the thing for maybe another 30 mile and the oil level is below min line again. There's no leakage from what I can tell, is this normal? Does a new bike just soke up engine oil?

Not normal! Your motor has a breakin period where the rings seat, usually about 500 miles. But to go through a quart in less than a fifty miles.....you'd see a constant flow of blue smoke coming from you tail pipe, muffler, that would block out the sun. I'm guessing your making sure the bike is on level ground and your holding the bike up straight when you check the oil each time. You don't want to have the bike on the kick stand when you check the oil. That gives you a false reading.
Being a brand new bike the dealer is the one to ask. If it's that new it should be under full waranty so have them check it out soon.

the only difference in any of the 250 ninjas is the paint scheme. since you are planning to paint it anyway get as the best bike you can afford. my 12 yo daughter is maybe 5' and weighs under 100 lbs and she can handle the 250 no problem (though she is an experienced rider) my guess is that in 2 or 3 years you will be aching for more bike. but it is a great bike to start out on. if you are older you may consider the SV650 or the ninja 650. both are also great starter bikes. what ever you do take the safety class offered in your area before you get on the street. and when selecting gear remember this..... how valuable is what you are putting in your gear???

There is something very wrong.
A new engine will use a SMALL amount of oil while the rings are wearing in.

Is the bike upright when you look at the sight glass? Or is it on the sidestand? Makes a big difference.

1 read the freakin manual

2 take your bike back to the dealer and have them tell you what is wrong

3 a new motor does not use oil period
4 proper break in will prevent oil use

this is not normal
is the bike smokeing if you cant tell pull the plugs and see if their blackmaybe bad rings
