There seem to be a lot of frog theories, but some of the best are here:
http://allaboutfrogs.org/weird/general/frenchfrogs.html
As for the gringos, some websites say it's a corruption of griego (Greek), and that it was generally used to refer to people who spoke another language. This seems like a stretch to me ...to get from griego to ******, but then the theories about it coming from a song called Green Grow the Grasses seems a bit much, too. I couldn't find any more plausible theories.

The French eat frogs. You'll have to ask the Spanish about Gringos.

A slur can be anything from an insinuation or critical remark to an insult. The following is a list of ethnic slurs that are, or have been, used as insinuations or allegations about members of a given ethnicity or to refer to them in a derogatory (critical or disrespectful), pejorative (disapproving or contemptuous), or downright insulting manner in the English-speaking world. For the purposes of this list, a slur is a term or word[s] used to insult on the basis of race, ethnicity, or nationality. Each term is listed followed by its country or region of usage, a definition, and (where applicable) a reference to that term.
****** (feminine, gringa) is a term in the Spanish and Portuguese languages used in some countries of Latin America to refer to foreigners from different cultures, especially from the United States, but also from Canada, the United Kingdom, New Zealand and elsewhere, including in some cases other countries of Latin America itself.
Some disagreement exists among English speakers regarding whether ****** is a derogatory term. The American Heritage Dictionary and other English dictionaries classify the term as "offensive slang", "usually disparaging" or "often disparaging". The term ****** does lend itself to derogatory, paternalistic or endearing connotations sometimes, depending on the context and the intent of the user. However, many native speakers who use it do not do so pejoratively, as is also the case with some English speakers. The enunciation of the word can often give away whether it was meant in a derogatory manner or not. There is furthermore some variation in the connotation of this word from country to country within Latin America, and between Latin America and the Anglosphere.

They are stereotypical names, French frogs because they eat frog legs. American's typified by avoiding "******" status, as being a foreigner. Same as the French calling the British roast beef, as we supposedly eat it all day every day.
Nothing to do with colour...

In the mexican war, some forward infantry regiments wore green coats. When the captains ordered them forward, they shouted "Green go!" over and over. The mexicans heard this as one word, and forever dubbed hostile americans as 'gringos'.
