Without knowing your friend it's abit hard.. But here is some suggestions to think about.

Why do you like her? Why is she your friend?

Is she:
Loyal?
Kind?
Self-less?
Trustworthy?
(etc...)

Pick a few characteristics that she is, and make one topic sentence per characteristic.

If you need to base it on a particular friend, depending on the nature of the essay, put in some examples of what she's done to demonstrate these characteristics.

An example topic sentence may be "A true friend is a loyal person who will not forsake you".
Or something else that is appropriate.

I would say that you need to write something about the course a friendship may take-perhaps discussing what qualities a friendship needs to keep it alive would be interesting to explore qualities like loyalty. What pressures are put on friendships would also be interesting to explore and how these pressures have changed over time or vary across different cultures. For example maintaining friendships over long distances and the effects of social networking sites on friendship and how these impact upon the quality of the friendship...As for the idea about exploring the media's impact upon celeb relationships...that sounds like an interesting topic but there are many angles that you could approach it from, for example how celebrities and the public manipulate media attention so that they can be portrayed as being popular- perhaps the link between friendship and popularity would make an interesting discourse... hope those ideas prove to be useful.
