Some don't - they're hermaphrodites, meaning they are both male and female, and can self-fertilize - some even give live birth rather than laying eggs.

Others, like apple snails which have separate males and females, mate like other separate gender animals. You can see photos of mating snails under the "ecology" section in this link on apples: http://www.applesnail.net/

Apples care capable of storing sperm for several months, so even if you separate them, a female can still lay fertile eggs.

You can leave them together or separate them - snails are mostly detritivores or herbivores, so they won't harm the eggs or young snails. Some fish may try to eat the young snails, though (some cichlids, loaches, gourami will do this).
