At the Weather Channel's site, there's a fall foliage map that's been pretty good in the past. It defaults to the current foliage that's presently available; if you go to the drop-down menu below the map, it has a group of "normal fall peaks" for various parts of the U.S.

They give times and places on a map that makes it very easy.

You can try and camp in the National Park just south of Gatlinburg. It will be beautiful. A better place to see the leaves is on the Blue Ridge Parkway.
