I always prune mine at around this time of year if I'm going to do it but I don't do it every year. I pruned it last year and would have had the best crop ever this year if the wind and rain hadn't blown two thirds of my apples off the tree earlier in the year but I still had plenty.

The general rule is Pips in the winter when they are dormant, and Stones in the summer. That is apples and pears in the winter and cherries and plums in the summer. Before prunning an apple you need to establish whether it is a tip or spur bearing tree. Some apple trees bear fruit on the tips of their branches while other bear the fruit on spurs along the branch. If it is a tip bearing variety then do not prune the whole tree as next year you will have no fruit. A really good book stocked by all libraries is The Fruit Expert by Hessayon. This book will not only tell you what type your tree is but also how to prune it. Hope this helps.
