Velveeta. OK, I know, it's processed... but it makes the absolute BEST grilled cheese in the known multiverse...
For anything else, I mix my own from a combination of Monterey Jack, Mozzarella, and Cheddar, shredded, mixed and then pressed in a hamburger press to make "slices".
