can you tell me how to prepare katayef, i have ready made katayef but i don't know if i should a7amas el nobdok etc, before filling them, and i don't know how to prepare the syrup, some say 1 cup sugar to 1 cup water and others 1 cup sugar to 1.5 cups water, and how much lemon do i add, thanks

thank you guys, now i have a problem, i tightened the tips well yet when i put them in oil to fry they all opened up ! :((( where did i go wrong

ok
the first guy gave u a recipe i never heard of ...anyway this is how mum do it....
you bring roasted nuts..u can buy them roasted it,raisins,(goz hend),sugar....and mix them all together
there are two ways....
either you form the atayef in a cone shape and u dip them in the hot oil...and then they become crispy...u leave them for a while and then put cream in the cone and sprinkle some of the mixture...
or
you bring the atayef...spread it on you palm...put a suitable amount of the mixture(not too much) and then close the atayef it will look like a semi circle...press the tips hard till they are sealed together....and then put it in the hot oil...
that's it....
it's better to poor on them some syrup(attar) after they are out of the oil....

edit:
i'll tell you what went wrong,either:
1-the atayef is not fresh,so they are not easy and moist,so they won't seal correctly...
2-the filling is too much,u need to decrease it...
sahar,the point is when u squeez them to close it,squeez till the pastry itself(yet3egno fe b3d) i.e. if u try to separate them they won't...u got it??...
it's ok for first time...

edit:
mum has a small device...it's like sth round and two hands one for each side...you put the atayef in the middle,mixture...then you close this thing and squeeze it and voila!!
u can find it at some shops for hope appliances

Katayef (Sweet and Delicious Dessert) recipe
1 package Katayef (shredded filo dough)
1 1/2 cups (3 sticks) sweet butter or margarine, melted
1 pound fresh ricotta Cheese
Sweet Syrup

Heat oven to 350 degrees F.

In a large bowl, fluff the Katayef until it is all pulled apart. Pour the melted butter over the Katayef and keep on fluffing so it is all mixed together.

Grease an ovenproof dish and layer half of the Katayef dough on the bottom. Spread all of the ricotta cheese over the dough, and layer with the remaining dough. Bake for about 40 to 50 minutes or until golden brown on top. Pour syrup on top and serve.

Sweet Syrup:
2 cups granulated sugar
1 tablespoon lemon juice
1 cup water
1 tablespoon rosewater

Mix sugar, water and lemon juice in a saucepan and let boil for about 8 minutes.

Add rosewater and continue to boil for another minute. Remove from heat, let cool a bit, and pour over Katayef.

buy katayf from halawani..and make the filling and fill it with the filling and FRY it in a cazarol till it become golden and then pick it and put it in syrup

1 tablespoon sugar..

zebeeb
goz hend

syrep:
300 gm (1 1/2 cup) water
300 gm (1 1/2 cup) sugar
1 lemon (o3srha)

Lol , you do not have to roast the nut I guess, anyway , if not, it is more healthy not to roast them not to lose Vitamin A contained by them. (you have them already roasted when you bought them).....did you try the raw katayef cone-like shape- filled with crème Chantilly and nuts, and the easiest,,, to buy them from la poire ready,,, Ate3ah .. hahaha

I wouldnt roast the nuts, they wont stay on the plate long enough for you to go to this much trouble
