What are the signs and symptoms (aside from abnormal bounciness) to be aware of in order to know that your front or rear shocks must be replaced.

The bounce test is about the best. If you can see that it is leaking oil, then it is time. If your car is about 6 or 7 years old then you can pretty figure that the shocks are getting worn.

Well just the feel of the ride can tell you but just go to the front and back of car and push down car with some force, if the shocks/car bounce more than 2 times you need shocks.

Abnormal oil seepage from around the piston seal area. Slight seepage is normal, but oil running down the strut is not good. You may also experience a knock type noise over bumps.

Bad bushing and leaking oil is another clue.
