It depends which belief system. Immortality can mean :
1. You are not desined to die -- therefore nothing of this catastrophic nature is ever destined to happen to you.
2. Dismemberment and mutilation has no effect -- if the limbs are reapplied you will be fine. When Typhon defeats Zeus in Greek mythology he cuts out his sinews to disable the god, since he cannot kill him. But the sinews are later replaced and he is fine.
3. You remain immortal but "die" and reappear as an immortal in the underworld -- e.g. the Greek god Zagreus, who was chopped into pieces by the Titans ; or the Egyptian Osiris who suffered a similar fate and became god of the dead.
4. Immortality is only conditional. Vampires are immortal, i.e. they will live forever, unless they are killed. Chopping of an immortal vampire's head and putting a stake through their heart was the usual way of getting ridding of them. The head was then buried separately.

First of all I wonder how long the question will last?
Second of all why bother putting the question when you can see its in manifest error of all things that create terror and then we all have to clean it up.
You talking about Lamb Chops cause that is the only chopping that is ever going to happen around here!
Do you realize why they do this to these people, its because they fear you will know the truth from them and they chop off that line. There is some born on the lines that where given and they are the ones that are chosen. Seek them, then help them they are the ones that need to keep telling the truth to all of the entire of mankind.

That's an inherent problem with the idea of immortality. You might as well ask what would happen if you jumped into a volcano or were eaten by a shark. The problem is that the body doesn't have to be invincible in most immortal stories...which would make existence an eternal vigilance of taking care of your physical self.

If you remember in the series, when someone went through a quickening, they got all the skills, memory, and personality of their opponent. So if you got your head cut off, you'd basically get to haunt whoever.
Except for that weird Rameriz thing, where he was in Highlander II. I don't know what's up with that. And the other planet where the immortals came from, it was like it didn't exist in the series. Maybe the rules are different for Sean Connery.

There is an old movie called "The Asphyx" which dealt with the spirit of death being captured. Immortality came with a price: the people still aged and -if injured- lived on in agony unless their asphyx was released.
In mythology, Medusa was the only Gorgon who was mortal. That's why Perseus killed her with decapitation. Wonder Woman comics had one of the other Gorgon sisters decapitated and she lived on - brain damaged but immortal.
Vampires have a conditional immortality. They can live on as long as they avoid sunlight, getting staked, burned, or decapitated. So I guess it depends on what kind of immortal you mean.

Ok so if you ask me I say that if you chop a head off and if it re grows keep chopping it off and the person will eventually loose all of it s blood and that person will then die from to much blood loss.

If you're immortal.. you can't die. So the possibilities are:
1) You can't have body parts hacked off.
2) The parts will immediately rejoin
3) You'll have 2 seperate, but living, parts of your body.
4) One part will die, leaving the other part immortal.
But as yet.. nobody has ever been immortal. So I doubt we'll ever know.

Both head and body sould continue to live independantly (accept in HIGHLANDER of course). although the head could do little more than sit there and talk and the body would keep running into things.

Our souls are immortal, our flesh however is not, if your head is chopped off, its either heaven or hell. There is a church on every corner, its up to you.
