The people that say those things are trying to make themselves look better than the ones they are stereotyping to those they are trying to impress. Or they want to be looked at because their "group" is superior to the group they just put someone in. Some people use stereotypes because they are too stupid to express themselves positively. Finally, some people are actually punks, girlie, gonks, or worse.

We stereotype if we have something negative to say about people. To make our prejudices more acceptable and to make them more believable, we put all the people we want to put down into a single, simple category by stereotyping them.
eg - don't like indians therefore all indians smell of curry.

Stereotyping is a shortcut.
