I mean, I get the whole idea that since he killed Davy Jones, he must assume the role, but why did Will have to cut out his heart? I thought Davy Jones cut out his heart so that he couldn't love.
So why did Will have to cut out his heart?
And wasn't he already dead?

Because after Davy Jones cut out his heart there had been a curse upon the ship(the flyin dutchman)and its captain and because of that there could be no ship without a captain and in order for someone to be a captain of the ship he had to carve off his own heart and be immortal...so when jack saw that Will was dyin he decided that it would be best that Will became the captain so that he wouldn't die..(jack's original plan was to become the captain of the flyin dutchman himself)

Will's heart was put inside the chest after Davy Jones's heart was taken out and stabbed by Jack. Will's father cut out Will's heart after Davy Jones killed Will, and put inside the chest because whoever's heart is inside that chest, even if they are dead would live again and be the captain of the Flying Dutchman(Davy Jones' crew). So thats why he has to be the captian of the Flying Duthman because it's the only way Will can still live.

He had to take over to live. From what I understand he has to keep the heart to stay alive.

yeah I thought that was a bit of a yarn myself. Pirates of the Carribean III was a bit lame.
