Actually, a lot of those on there were speculation solvings. And a lot of them weren't even solved. There were very few that were solved when they did the "Updates" at the end of the episode.

In the United States, broadcast television and cable television are primarily entertainment/"revenue generating" forums. The name "Unsolved Mysteries" sounds entertaining. "Solved Mysterious" just doesn't sound as entertaining.

Or, it may have been a legal matter. Most shows on television are purely fictitious, and "Solved Mysteries" sounds definitive and truthful. In order to avoid the implication that the solving of one of those mysteries was factual, the show's title was designated "Unsolved Mysteries."

Or, it may have been the result of a poll taken by the show's developers.

It's an unsolved mystery why the title of the show is "Unsolved Mysteries".

The show was about UNSOLVED crimes and circumstances. They occasionally had updates if they solved it but for the most part it featured unsolved mysteries, just as the name says.
