You could say that his teaching style inspired you to become an avid reader/writer/researcher because he imparted his love of poetry (or literature or drama, or whatever) to his students.

It would be wonderful to talk about how he inspired you or others to love language, books, media and depending on what "kind" of English teacher he was, you could include the dreaded grammar. Ask some odd grammar questions, show off about how much you learned from him. Then of course he is more than an English teacher, so include other stuff from his life as well. Debate? Drama? Volleyball? Eats Shoots and Leaves. (That's a very fun book, you may find some helpful humorous stuff in there). Good Luck!

OK, I wil try. Tell, that maybe years change too quickly , but each one is a wonder of beauty. That whatever we do for ouselves it dies with us, but what we do for others , it will remain forever. At the same time thank him for the seed of spirituality he left in you , that this seed will sprout , grow and blossom. That the good memories he's made will last in each of you a lifetime. That he has not only given lectures for you , but also left good prescriptions for your future. That you are lucky or proud to have been his student. The teachers are waiting for us as they always have , beyond the edge of the light ( Wendell Berry). Just do it sincerely, with good , clear articulation, with a smile on your face and you will be awesome!!!!

Teachers like to know they made a difference. So no matter what else you say, be sure to let him know he made a difference in the lives of the students he taught.
I told that to my mom seconds before she died and I know that gave her peace. I could have swore I saw an ever so slight smile just before her last breath.
