Topping: Combine 2/3C quick oats, 1/2C Bisquick Original Baking mix, 1/3C packed brown sugar, 1/4C firm butter/margarine. Crust: any cook/no-cook pie shell. Filling: 1/2C pineapple juice, 1/2C raisins, 1Tb cornstarch, 1/8 tsp each ground nutmeg & ginger, 4C peeled sliced pears. Mix topping ingredients, set aside. In 2qt pot, add fillng ingredients except pears, stir constantly over med. heat until it thickens & boils. Boil 1' remove from heat, add pears, cool as you like (or have warm), spoon into crust, sprinkle topping. I like canned pears & graham cracker crust.

Eldorado, you could use diced apricots since you want a fruit that contrasts with the mellow pears, a little kick! Or buy a jar of mincemeat & pick out what you like best.

Hey CaM , i'll keep ya posted on the football coach. The last couple days we have dropped into the 80's after spending the hottest summer on record(upper 90's lower100's with humidity right up there. Tommorow a high of 69 deg., low tonite 49. What a change and welcome too. That pie sounds great but what do ya think I could sub for the raisins? There is a tory behind me and raisins I'll tell ya sometime. Catch ya later. Oh yea, ever heard of a Dutch Oven? it is a way to bake outside over coals. It is an iron pot with a lid. Settlers used to use it on the trail. Heck, my grandmother used it in the summertime too.
