I want at least 3 episodes of an hour long show (which is about 45 minutes maybe, without commercials) onto a blank DVD. How can I do this, and how much will the quality of the video be affected?

Hi catchandthrow22,

Yes you can record more then 2 hours on a DVD. You will have a reduction in quality.

Your choices are SP (2 Hours excellent quality) - EP (4 Hours - good quality) and SLP (6 Hours - fair quality)

It all depends on the settings of your DVD recorder.
They usually have good, better, best or SP, LP, SLP.

Pick medium quality (better, or LP) or about 3-4 Mbits/s and you should be OK.
