Nobody ever believed it was cheese. The term "green cheese" doesn't mean cheese that's green, but cheese in it's original state before ageing. The moon does have something of the appearance of this.
That fact probably led to this quote from the 1600s, showing that they didn't think that, even the uneducated farm-folk.
"You may as soon persuade some Country Peasants, that the Moon is made of Green Cheese (as we say) as that 'tis bigger than his Cart-wheel"

Its just a myth. They proposed that statement because they have never actually got a sample from the moon proving it is made of cheese. They proposed that because when u stare at the moon, u will see craters that make the moon look like cheese.

Have you ever seen swiss cheese? It is pale yellow, with lots of holes in it. The moon's appearance (to the naked eye) is similar, with the holes actually being craters.
