The pitch is controlled by the wavelength of the sound. The loudness is controlled by the amplitude of the sound (or the pressure differential between succesive maxima and minima of the wave).

The apparent wavelength is altered by relative motion between the source and the listener. If they are approaching each other, the wavelength appears shorter and the pitch is higher. The opposite is true if they are moving away from each other.

(1) The pitch of a wave is due to the density of the medium. If the waves are produced on a string , its linear density, tension and thickness affect the pitch. The loudness depends upon the energy of the wave or the amplitude.
(2) The doppler effect can be experienced by the listener very well. If we are standing on a railway platform and a train is approaching the plat form, and without reducing the speed if the train crosses the platform we can experience the doppler effect like this. When train approaches the sound becomes sharper and sharper and wile receding the sound becomes more and more rough.

1) The amplitude (height of the wave) and frequency affect the loudness and pitch of a sound. Wavelength is inversely proportional to frequency.

2) The Doppler effect will actually be accentuated if the person is moving towards the source. Doppler depends on the amount of compression of the sound wave and your motion would compress the wave more until you pass the source, at which point the mutual moving away would elongate the waves even more.
