There is an enormous number of things to do in Sydney. Look at the What's on in Sydney web site at
http://www.whatsoninsydney.com.au
That will tell you all the things that are always there plus any special events that are coming up. You shouldn't miss a ferry trip to Manly, Taronga Park Zoo, Bondi Beach or a walk up to Observatory Hill from Circular Quay.

There are so many things you can do.. some of my favourites:
Dine at the Sydney Tower, see the harbour bridge, see the opera house, stroll the Botannical Gardens, go to Star City to gamble, dine at Pancakes at the rocks (open 24/7), see the aquarium, dine at Chinatown (my favourite - Superbowl), shopping on Pitt Street Mall, get on the ferry around the harbour, see the animals in the zoo, take a rollerblading tour... and many many more
