If I need a loaf of bread, or milk (like a half gallon or more). I will not have a car because we are using the shuttles to get around. So, leaving the property is not an option.

I heard that one of the resorts, maybe the wilderness lodge has a general store. Is that correct, and do the shuttles run to this resort?

All of the Disney Vacation Club resorts have "general store" type places. The are the following

Beach Club/ Villas

Wildernes Lodge/ Villas

Saratoga Springs/ Villas

Boardwalk Inn/ Villas

Old Key West/ Villas

If you are staying at a Disney Resort, you will have access to many small conveniences such as you listed in the store inside the resort. If by chance the resort you are staying at does not have what you are looking for, ask the front desk or concierge cast members. They may be able to get you items from the restaurant's kitchen, schedule a taxi to pick you up, direct you to the nearest resort that will have what you are loking for (via Disney shuttles) or even if you talk to the right people, a cast member may even drive you to a site where you can purchase what you need. The key is don't be afraid to ask. Disney cast members are able to arrange for practically ANYTHING--why do you think Disney is "where dreams come true"? Because they accomodate to you and what you need or are lacking, they will do everything in their power to make it right.

The gift shop (or one of them if it has several) in each resort sells a few basic food items (they do in fact have milk, orange juice, & donuts since I've bought them for my in room breakfast. I assume they have bread.)

But a good way to find out in advance: Here's what I believe what the main WDW board # is (at least it was when I called a few years ago):

Ask for the gift shop for the resort you are staying in by name (check the site below if you are staying at a resort with more than one store to identify the one selling the 'sundry' items). Ask specifically what items you are looking for (loaf bread, cereal, etc). Anything that you really want that they don't have consider bringing with you. You will find in most cases traveling from resort to resort via bus service is very inconvenient since it requires taking a bus from your resort to a park or downtown disney, then a bus from there to the other resort, and repeat the process for the return trip. (If you are at a monorail resort or at one of the resorts by the Boardwalk you have an easier time geting stuff at the other stores in that area).

Gooding's Supermarket. Is actually the only complete supermarket right on their property. Is located at the East main Entrance of property. Is actually on Disney property, a shopping center called CrossRoads. Right off Apopka VIneland Road. Shoppes on this Crossroads are not own by Disney, but their Landlord is Disney.

As an RVer, I've stayed at Fort Wilderness many times and there is a small "general store" there. It is located close to the "Whoopie Doo Revue" ...which is right next door to the Crockett Tavern.

the trading post at Fort Wildness has a good selection of basic groceries bread, peanut butter, lunch meat etc. down town Disney has a fancy food mart that can be good. there is a Goodies supermarket in the Disney village market place across the street from down town Disney.
