how "shiny" will it make my pine door?

The stain I have on there is a dark walnut. And I like the look now, and I dont think I want it to be really "shiny" looking.

So, will the semi-gloss do that or not?

I like to use 3 coats of a water based semi-gloss poly followed by one-two coats of water based satin. Reason behind is semi-gloss builds up thicker requiring less coats then satin poly. Even if you use an oil based poly this is a fact.

This is how I would finish your door

Sand using 150 grit paper

Use a pre-stain conditioner (Pine doesn't stain evenly)

Let it dry

Stain the door (Do this as many times as needed to get the color you like)

Seal with Bulls Eye Universal Sealer (Dries in 10 mins.)

Apply 3 coats of water based poly (One coat every 2 hours depending on the temperature your working in)

Sand using a 320 grit paper

Apply 1-2 coats of satin

Semi gloss certainly has a sheen to it. I have no clue what you're using; but I have to assume it comes in other levels of SHINY. Such as a Satin. Best advice I can give is test samples of both the stain and your choice of clear coats on another/ scrap piece of material.

Almost any substance you use will have some sheen, IE: Varnish/ Poly/ etc. BUT Matte look wood isn't usually how finished wood is found, in a home, anyway.

Get a sealer with a satin finish, will be less glossy than semi-gloss.

Just buy some clear matt varnish or you can go over the door with a product called Danish Oil. I bought mine from Wilkinsons.
