Lightning is caused by static electricity with the earth so it can appear at any time.

We see more of it at night because it is easier to see the flash against a dark sky. Also storm clouds form and get active when there is a collision between cold air and warm air masses; when night falls the temperature drop which means that it can be more conducive to form thunderstorms.

There is a University in Florida that studies lightning. They shoot rockets into clouds trailing a wire hooked up to a well grounded test stand. That stand gets hit a lot. They are never sure exactly when a bolt will strike and more often then not they don't get one, but they get enough say a dozen a season; to extract some meaningful data.

Lightning can occur at day time as well as night time. But the frequency of occurance of convection currents in the atmosphere,is more during the afternoon and evening.Hence thunderclouds form more in the late evening or early night producing more lightning in the evening or night.
