We was wondering if it would be a good idea to bring our bicycles, we will be traveling by train, and staying in youth hostels... Why why not?

no, since you are doing the train, you can also walk,.bringing the bikes along with just be more of a hassle at the airport and you'll have to pay extra fees that you can use for something else.

If you are going to spend most of your time in the cities I say not, leave your bikes at home. Most cities rent bikes out at train stations for really reasonable prices, I think there are a couple of cities that only require a deposit and the actual rental is free. Traveling with a bike is a hassle you can avoid this way.

Not unless you intend to devote at-least 50% of time on the bicyles. Otherwise they will incumber your activity.
