Why is it that every morning when I'm getting ready for work, the news is always covering an early morning apartment fire?

Because if something goes wrong when people are awake they can attend to the fire.
However if they're asleep they can't.
Thats why with factory or retail fires they happpen at night when no employees are there.
The danger is if you are asleep you might not have the chance to wake up because the smoke will slowly get the better of you.

Maybe people are busy getting ready for work and set their kitchen on fire cooking toast or leave the iron on.

Because fires usually start at night after dark so other people don't see who set them. Or people are sleeping and wake up to smoke.
