If it is an electric water heater it is easy to replace. Just turn off the water, unplug it and disconnect the water. To install, do the exact opposite.
If it is a gas heater you better call a professional because if you have never worked with gas plumbing you could blow up your house.

Find your electrical breaker box and turn off the power to the water heater,then turn off the water valve coming into the water heater(probably on top) hook up a water hose to the bottom and drain it. When its empty take the hose off and use a stick or something to scrape out the mineral deposits in the bottom--I tie a bent spoon onto a stick and pull it towards me to clean it out. Then unscrew the heater elements(should be two--1 on top and 1 on the bottom)Righty tighty, Lefty loosey. Then buy 2 new ones(same wattage about 4500 watts)Screw in the new ones and tighten them. Then fill up your water heater, then turn on electricity. The heater elements should be about 12 or $14 dollars each.

usually its just a thermal coupler, in essence its the tempurature sensor, i replaced one it wasnt hard. just be patient an dont force anything.
