Where were all the dwarven strongholds during the lord of the rings and why was Gimli the only Dwarf who fought during the war of the ring?

Gimli was not the only dwarf who fought during the war of the ring, he was merely the only dwarf amongst those the story is mainly about. When some of Aragon's men caught up to him while he was in Rohan in response to a summons Gimli spoke to Legolas and wondered why they had not asked for some of their people to come and help. Legolas responded that war already marched on their lands and basically, they could not come as they already were fighting.

As mentioned earlier, in the addendums to the Lord of The Ring it refers to some of these battles, specifically around the area dealt with in The Hobbit. Although the main battle involved Gondor, Sauron's troops were fighting on many fronts as he had many allies scattered over Middle Earth. The Dwarves, Elves, and Men in other areas were all involved in fighting these troops.

Gimli was the only Dwarf who fought in the war in the south the others were fighting along side the Elves in the north.

Gimli's kin in Moria had been overrun . Other dwarves did not hear about the big war . They live in many places under the ground , like the king under the mountain .

The dwarves in the mountain (formerly Smaug's mountain, from The Hobbit), were beseiged themselves and could not get out to the rest of the war.

The dwarves in Moria were overrun--all killed. It's explained briefly at the Council of Elrond in Fellowship of the Ring.

It was not mentioned that Dain was fighting up by the Lonely Mountain with the Elves and King Brand.

He and the king died, but the war was won. It's mentioned in the appendix of the Return of the King, I believe.

They were probably hiding out, not wanting to get involved, and hedging their bets as to the outcome.

According to the silmarillion, the dwarves were self centered and at times collaborated with the orcs/sauron if it suited their needs (as did men). The only ones who never sided with the enemy were the elves.
