Blades of Glory - Stereotypical role reversals
Taladega Nights - Men in race cars and wife taking care of house
Edward Scissorhands - Parody of 50's suburb with stereotypical housewives. Though, perhaps not a "today's movie"
Pirates of the Caribbean - Typical male pirates and heroes with female ladies in distress
Most comedies tend to use stereotypical roles with role reversals for comedic effect.

Sex Role Stereotyping:
The Stepford Wives (this one is the best "sex role stereotyping movie I've ever seen)
Mean Girls (although this one stereotypes only teenager girls)
How to lose a guy in 10 days.
Opposite Sex Roles:
Saving Silverman
Hot chick (comedy where a girl and a criminal exchange bodies)
Junior (that old movie where Arnold Schwarzenegger gets pregnant)

The remake of "Halloween" had some, in the beginning the father was yelling a lot at the mother while the mother was supportive of the young daughter that would grow up to be Michael's sister.
If you want opposite sex roles then "Million Dollar Baby" is an obvious choice.
Oh and completely off-hand, don't "Halloween"; that was probably the worst waste of $8.25 I've ever spent in my life.

I think Black Snake Moan played off the stereotype that White women are easy and they assume all Black men are well endowed.
I didn't like that movie at all, I thought it was very nasty.
