At the moment, I have a cover version of Pink Floyd's High Hopes in my head.
It's by a group called Gregorian, who (as the name suggests) cover songs but in Gregorian Chant style (which I can't stand normally).
They've done some interesting covers, such as Nine Inch Nails, Belinda Carlise,Phil Collins, The Rasmus, Coldplay, Metallica and even attempted to cover Rammstein!
But their version of My Immortal by Evanescence is probably one of the most heart-breaking songs I have ever heard.
I know that it's not really any of those styles that you listed, but it's certainly different and great to chill out to.
