I'm 18 years old and am in love w/ the 600R. I'm currently riding a 500cc cruiser but was planning on getting the YZF after I finished college in under 3 years. I went to the site and for 2008, its not among the models. Honda doesn't list the 600F4I anymore either? Does this mean anyone who wants a performance 600 without back problems is going to be out of luck from here on out?

Well, they still offer the FZ6, which sounds like the bike for you since you want a more upright riding position. Its got the same power as the YZF600R on a naked bike for less money.
Then again I guess you didn't notice that Yamaha is making 2 versions of the R6, 1 is a race version the other is called R6S for sport riding. The R6S is the replacement for the 600R. So, again you've got 3 choices for a sport 600 from Yamaha and you can always get a used bike if the new one's don't suit you for some reason. Looks like the 919 is the closest thing Honda still makes to fit your needs. However, you will definitely want to take a strong look at the new Ninja 650R sport/touring bike from Kawasaki, it would be perfect for you.
