There are actually many many reasons for not being wireless on everything. The first one that comes to my mind is limited bandwidth!
FM radio is wireless, takes up a portion of the frequency, uses space. Put two transmitters on the same frequency very close to each other , no one can receive either of them.

The same applies to WIFI devices, If you and your roomate put up two WIFI routers and set them on the same channel (there are only 11 in the US and only three of those do not overlap each other) neither of you will be able to use them they will interfere with each other. This is happening alot between neighbors and they don't have a clue why the wireless is not stable and working.

If everyone had MP3 wireless headphones you would hear more than just yours when in a group with many! In fact if that was a large group NO ONE would be able to HEAR anyone they would all block out each other. Even bluetooth has this issue when near another unit. You simply can't cram all the signals needed into the space available!

SO wires still beat wireless in many situations and the situation is getting worse daily as more and more wireless devices are being used.

Interference between devices is a real issue, cordless phones vs Wifi etc. Put enough wireless devices on a the same time and none of them will work!

One word that mostly answers that: Cost. It is almost always much cheaper to use a wire than to go wireless. Consider the ear piece you get free with your cell phone vs. the bluetooth headset.

With regards to computer networks, I think that the quality of digital media (audio, video and the like) will always grow with the faster standards(wired vs. wireless) and often will do so regardless of the cost. Will wireless always be slower? Depends on on whether it is more cost effective to produce and use (though reliability also plays a part).
