There is a small amount of liquid in the popcorn that heats up and turns to steam creating am small explosion from the build up of steam. This is just my thought here, but I think the more water makes it take longer to pop, but makes a bigger piece of popcorn, and I think the amount though will be less because the water was taking up space in the kernel.

The moisture trapped in the kernel turns to steam rapidly. The mass would decrease with the loss of water. To determine the percentage you would have to find the weight by volume of a completely dry, un-poppable, kernel. In order to find the weight by volume difference with a kernel containing the proper percentage of water.

the heat causes the water to turn into gas and the particles of that gas to expand causing the kernel to turn itself inside out you will find the mass of water lost by measuring the kernel before popping and after and the decrease in mass will be the amount of water lost
