I believe mine died during my battle with Ick. I cannot find them anywhere!

Do they whither away to nothing? Or did one (or more) of my fish eat them? I have 6 platys (2 different breeds), 2 black skirt tetras, a blue guarami, and a snail.

Your ich medication is what may have done them in, depending on what was used. If your medication contained copper, this isn't safe to use with invertebrates (which includes shrimp and snails). Another good possibility was that the gourami is the guilty party - they can be quite aggressive at times if they're the standard rather than the dwarf blues. Since shrimp have an exoskeleton, they can't grow without molting their exoskeleton, and once molted, the new one is soft for some time, giving fish the perfect opportunity to attack and eat them.

You might also take the time to look around where your tank sits - if you don't have a cover over it, shrimp can also jump from tanks, especially when they feel threatened.
