I would go with the original Blade only, and a close runner up would be FROM Dusk Til Dawn. If you want a vampire movie that isn't centered around action, though, go with Interview With The Vampire.

Lost Boys
There's a reason so many people listed this one. It's a fantastic film, a really wild take on the Peter Pan story.
Fright Night
I just watched this one twice during the weekend, and it certainly holds up. It started major changes in the image of vampires~at least for the general public. I'd already been doing this in my writing.
Dance of the Damned
This one is such a tiny film that it never gets mentioned much. It's a quiet film in which a vampire chooses a woman who seems to be a willing victim, then she decides to argue for her life. Cyril O'Reilly plays the vampire. This one isn't full of gore and action, but it's fascinating.
Vampire Circus
I've seen this only on network television and plan to have the uncut version someday when I can afford it. When you see the acrobats, I'll bet it will remind you of the ones in "Van Helsing". VC had to be the inspiration, just as the dance had to be inspired by the next one on my list.
The Fearless Vampire Killers or Pardon Me But Your Teeth Are in My Neck aka Dance of the Vampires
Yes, it's a comedy, definitely what is called a black comedy. The director, Roman Polanski, also stars in this one. The leading lady is Sharon Tate.
Dracula: Prince of Darkness starring Christopher Lee, his second vampire film for Hammer
I like this one more than the first in the series, which is worth seeing, too.
Vampire (TV movie) starring Richard Lynch
He does a remarkable job in this film that looks as if it might have been a pilot for a series.
I, Desire (TV movie)
Sometimes this plays on a movie channel, and it holds up quite well.
The Night Stalker (TV movie)
When it aired, this film landed the highest rating in TV history. I think it was toppled from that place by the final episode of M*A*S*H. This is the film that inspired the creation of the series "Kolchak: The Night Stalker", which ultimately inspired Chris Carter to create "The X-Files"!
Interview with the Vampire
It isn't what it could have been, but it's quite good.
Queen of the Damned
I have to list this one if only for the handsome, charismatic Stuart Townsend. It has some spectacular moments.
Brides of Dracula
This is another Hammer film, and I've seen it many times.
Nosferatu
Check out this silent film that was nearly wiped out of existence but survived! Bram Stoker's family insisted that the film's story was "stolen" from "Dracula", Stoker's most famous work, and wanted every copy destroyed. Now, it's counted among the best vampire films ever made. You'll see scenes copied in many films, including "Fright Night".
Dracula starring Bela Lugosi
I count it among my favorites because of Dwight Frye, who plays Renfield. No wonder Dracula kills off his helper since Dwight is very good at scene-stealing.

Interview With the Vampire is my favorite because of Brad Pitt. I really like the old Dracula movies starring Bela Lugosi.The "special effects" are so cheesy. A very funny movie is "Abbott and Costello Meet Frankenstein." Dracula and Wolfman also star.

"Interview with a Vampire" was obviously a bit homoerotic but I loved it. "Vampire in Brooklyn" was ridiculous if you're looking for something funny. "From Dusk 'Til Dawn" was more like an indie-lovers fav (like me). If you're more into the (almost overbearing but good)ACTION-packed kind then "Underworld" and "Blade" is a better choice. It really all depends on what you're into.
