is a country that has a really big lake on one side but otherwise surrounded by only countries, would it be considered landlocked?

It is still landlocked. The lake is still a border with another country not an access to open water.

No. Landlocked means that the country is surrounded by land on all sides. Rivers and don't count as access to water, but a big lake does, as long as it's really big and not just like a pond.

It's still landlocked. Malawi is a perfect example, all the while Lake Nyasa borders a large section of the country.
