I have lived here 16 years. I am not a big bar-goer or music buff, I prefer the outdoor lifestyle living in Austin affords...
Rock Climbing - Go to the Austin Rock Gym, either just give it a try or pay for a lesson to get a feel for the sport. Then learn about all of the great places to go climbing in and around Austin (Rimmer's Ranch, Green Belt, E-Rock, etc). The basic equipment is under $100 (shoes and chaulk bag). If you get serious you can invest in a harness and rope.
Mountain Bike - Several areas around Austin for mountain biking. You can rent bikes in some locations.
Canoe/Kayak - You can rent them many places.

As a complete Texas does suck however I might decide on Austin over San Antonio. I feel Austin is the nice town in Texas. Houston, Dallas and San Antonio are conservative however Austin is extra liberal. Austin is the "are living musical capital of the sector" and its track scene are not able to be beat in Texas, to not point out it is tremendous night time lifestyles.

madfigs has the right idea.
there is really too much to list.
I'll spare you the generic things and tell you what I like.
cliff dive at pale face (pace bend park)
drive a motorcycle across the 360 bridge (Pennybacker bridge?)
spend too much money at a nice restaurant.
See an incredible band in a crowd of 20 or so.
have a taco and shop for art all in one place. That sort of thing.

Campbell's hole in the greenbelt with a 6-pack, s'mores at Halcyon coffee shop, see a band you've never heard of, burgers at Casino el Camino on 6th street, clubbing in the warehouse district, etc.
Just pick someplace and go!
