Depends on the bar and the day but generally about 2 or 3 am; I didn't stay up late enough to find out....
If you want to stay up later, there are lots of casinos that stay open till sunrise (6am or so).
You can check out guide books like Lonely Planet, Frommer's, or Fodor's, etc for their night life recommendations.

in Barranco, they are open all night long on the weekends as well as in Miraflores.
Have fun, fing a local, without a local, u'll be lost but the website I gave you will give you names of the most popular bars in Lima and the "Penas", make sure you visit the penas. There is one that is called "Las Brisas" that is really nice.
