If everything occurs in this order, it sounds like you might just be a quart or two or three low on transmission fluid.
When you hit the gas the engine will rev with less forward momentum than usual and it might jump into over-drive prematurely assuming you are going faster than you are and vice-versa when coming to a stop.
If this does not help, you might need to look into a throttle position sensor.
Might need to have a dependable shop drive it and then do a diagnostic on it before jumping into any parts or repairs. Hopefully it's an easy fix.
Good Luck!

If the car is an automatic then it should go into overdrive anyway, unless you actually have an overdrive switch that you turn off, if it has a high idle then a few things can cause that, bad air idle control valve, faulty injectors, etc, if it's hard to stop while driving then maybe you have bad brakes

Hard to Stop:
Check your rotors and pads, your brake booster might be malfunctioning, low brake fluid, calipers might need to be rebuilt.
High Idles:
Your throttle might be sticking, or a sensor going wonky
Overdrive
If you have an over drive switch you can turn it off and on and see what happens. Sensor for the transmission might be kicking it to switch into overdrive, or something in the transmission is letting slip into overdrive.

Try checking your idel screw if you have one. Sometimes they can be turned in to far and cause you to idle high all the time. As for the stopping part, have your breaks checked. Check your break fluid as well.
