Study a language to a place you'd like to travel to someday.
Learn about a new cuisine and try making it at home.
Try studying variations of yoga.
Read up on topics that intrigue you.
Try something crafty. Make an item for your home like a decorative picture frame, do a collage, 3-d art, or photography. Maybe you're into making jewellery or clothing for a night out with friends?
Study up on art and go on a trip to a museum to see if you've mastered the techniques of interpretation.
Go on a wine tasting course (and bring some cool ones home to sample for later...hehe)
Learn how to count cards and see if you can make some money at your local casino -grin-
Believe it or not, I get my kicks from knitting. (Go figure.) Maybe it might just be relaxing for you to do something that doesn't require as much mental energy (depending on the pattern, might I add). It's a great break from extremely mentally taxing tasks. Plus, it puts you to sleep if you do a repetitious pattern.

Try coin collecting. It doesn't have to cost you a lot. You can go to the bank and pick of a box of coin (whichever denomination you like) for exactly face value. A box of pennies is $25, a box of nickels is $100, a box of dimes is $250 and boxes of half dollars or quarters are $500. The bank can pull out just $100 for you and you wouldn't have to buy all $500 if you didn't want to.
Once you get a box, you can go through and pull out the better coins (there are books to help with this or websites). You can pick up a coin book and try to fill all the holes or just search for interesting ones.
The coins that you don't want can be returned to the bank and put straight back into your account (though it's often better to return the coins to a different bank (not just a different branch but a different bank) so that you don't search the same boxes over and over). So you get most of your money back and you could then get another box.
Also check your change for interesting finds.
Some things to search for: wheat pennies, silver dimes, silver quarters, old coins, error coins, etc. There's always the chance that you could find a real treasure!

You can make this and give it for a gift.
Get large mouth bottle. Glue a statue (something your friend is interested in) to the inside of the top of the bottle. Fill the bottle with sparkles and mineral oil. Put the top on the bottle (make sure it will not leak) turn it over and you will have a snow scene.

Try doing crafty stuff, like cross-stitching, embroidery, knitting, or crotchet... It's what I do as a hobby, and its absolutely entertaining.
