You don't unless you attached a request for a Read Receipt to your email. Even then that option is only available with certain email products such as Outlook or Outlook Express and is contingent upon whether the email recipient chooses to allow the automated acknowledgement.

There are a few mail providers who have the receit option. If you select that, when the recipient opens the mail, he will get a pop-up asking him to acknowledge the receipt and if he clicks yes, you will receive a message to that effect.

I dont think there's such a feature yet telling you whether or not your recipient opens the mail...
